Where balance exceeds expectations...

Text Box:    Our philosophy for making wine at Tassajara is simple, “balance”.  Our wines are harvested when the fruit tastes its best, and in Paso Robles that means full maturity.  We use state of the art crushing equipment for whole berry fermentations on our reds and whole cluster pressing for our whites.  Only the best French Oak Coopers are used in the aging of our wines (Francois Freres, Remond, Vicard, Billon and Marsannay).
